Banana Lemon Bread

Ingredients
- 2/3 cup butter, softened
- 1 cup sugar
- 2 eggs
- 3 ripe bananas, mashed
- 6 tablespoons fresh lemon juice
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon grated lemon zest
- Confectioners sugar
Instructions
- Preheat oven to 350
- Cream butter and sugar together until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Blend in the bananas and lemon juice.
- Stir together the flour, baking soda, and salt. Add to the banana mixture. Stir in the lemon zest and mix just until blended.
- Pour the batter into a greased 9 1/2 x 5 1/2 in. loaf pan.
- Bake for 1 hour or until done.
- Remove the baked loaf from the pan after 15 minutes from removing from oven. Cool.
- Sift confectioners sugar over the top prior to serving.
