Pumpkin Bread with Chocolate Chips

Ingredients

  • 3 cups flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 4 large eggs
  • 2 cups sugar
  • 1 15oz can pure pumpkin
  • 1 1/2 cups canola oil
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Grease two 8x4 inch loaf pans. In a large bowl combine flour, cinnamon, salt and baking soda. Beat the eggs, sugar, pumpkin and oil in another bowl. Stir the pumpkin mixture into the dry ingredients, just until moistened. Fold in the chocolate chips. Pour into prepared pans, bake 60-70- minutes or until tester comes out clean. Cool 10 minutes before removing from pan, cool on wire racks.
