Roasted Pear Salad

I was in the produce department and picked up a few Bosc pears, baby spinach, and goat cheese. I then thought I would create a roasted pear salad. I have baked pears previously, however this time I thought a salad with a warm pear would be delicious. I am writing this the morning after I served this salad, it was so good, I don’t want to forget how I made this salad. The goat cheese melts on the warm pear and the result is wonderful.

Roasted Pear Salad

Ingredients
  1. 2 Bosc pears
  2. 1 tablespoon honey
  3. 1 teaspoon bourbon (optional)
  4. 2 tablespoons butter, melted
  5. 1/8 -1/4 teaspoon roasted red pepper flakes (add amount according to your preference)
  6. 1/4 teaspoon cinnamon
  7. fresh baby spinach
  8. Goat cheese crumbles
  9. Dried cranberries
  10. Maple dressing
Instructions
  1. Preheat oven to 400
  2. Cut pears in 1/2 and remove core. Place flat side up in a baking dish. Mix honey and bourbon together and drizzle over pears. Drizzle butter and sprinkle with red pepper and cinnamon. Bake 15 minutes, turn pears over and bake and additional 5 minutes.
  3. Prepare salad plates. On plates put a layer of spinach leaves. Top with warm pear, goat cheese crumbles and dried cranberries. Drizzle with maple dressing. Salt and pepper, if desired.

  1. Maple dressing
  2. 1 tablespoon pure maple syrup
  3. 1 tablespoon Dijon mustard
  4. 1/4 cup extra virgin olive oil
  5. 1 teaspoon apple cider vinegar
  6. Salt and pepper
  7. Mix well.

Shrimp and Rice Salad Pita Pockets

Today, as I was looking through our freezer I spotted 1/4 pound of shrimp that I had left from another recipe.  I immediately thought I should make shrimp and pita pockets.  This sandwich combines the best flavors of curry, served cold in a pita sandwich.  The crunch of the apple, the flavor of the shrimp, cashews, green onions, and avocado send this over the top with flavor.  Tuck shredded lettuce in your pita, fill with this shrimp and rice mixture and top with a dollop of your favorite chutney.  Your mouth will dance the happy dance when you take your first bite.  Sensational!

Shrimp and Rice Salad Pita Pockets

Ingredients
  1. 1 cup cooked rice
  2. 1 1/2 pounds medium shrimp, cooked, peeled, deveined, and chopped
  3. 1 apple, diced
  4. 1 avocado, peeled and diced
  5. 1/2 cup salted cashews, chopped
  6. 1/3 cup chopped green onion
  7. 1 - 2 teaspoons curry powder
  8. 3/4 cup mayonnaise
  9. 1/2 cup sour cream
  10. Salt and pepper, to taste
  11. Pita bread
  12. Shredded lettuce
  13. chutney
Instructions
  1. Combine the rice, shrimp, apple, avocado, cashews, and green onion in a large bowl.
  2. Mix curry powder with mayonnaise and sour cream.
  3. Pour 1/2 sauce over the shrimp mixture. Fold until well moistened. Use more sauce if needed. Chill 3 - 4 hours.
  4. Serve with shredded lettuce, pita bread and chutney.

Spinach Maple Apple Salad

I am sure everyone is thinking the same thing – let’s start the New Year with a healthy twist.  This salad is one that you can serve with grilled meats, soup, or make this salad a main dish and add grilled chicken or pork.  The key is the wonderful dressing made with pure maple syrup.  Make a double batch of the dressing and keep for another salad later in the week.  I like to add sliced apples and dried cranberries.  You can also add roasted butternut squash cubes for added interest.  This salad is very easy to make and always one that you will be asked for the recipe.  

Spinach Maple Apple Salad

Delicious as a side salad or main salad with the addition of grilled chicken or pork

Ingredients
  1. Maple Dressing
  2. 1 tablespoon dijon mustard
  3. 1 tablespoon pure maple syrup
  4. 1 teaspoon apple cider vinegar
  5. 1/4 cup extra virgin olive oil
  6. salt and pepper to taste

  8. 4 oz. mixed greens or spinach
  9. 1 sliced apple - I prefer Honeycrisp apples, but any variety can be used
  10. 1/2 cup dried cranberries
  11. 1/3 cup goat cheese crumbles
Instructions
  1. Combine dressing ingredients and whisk to combine. In a large salad bowl, add all of your salad ingredients, except the goat cheese. Just prior to serving, toss salad with enough dressing to just moisten (do not over dress your greens with too much dressing), top with goat cheese crumbles.
