Three Ingredient Beer Bread

This recipe is so easy it is almost embarrassing.  I have had this recipe for years and I cannot remember who gave it to me, but it is possibly the easiest and quickest recipe I have.  Three ingredients and you have a loaf of bread. I have seen mixes in gourmet stores for beer bread, the mix is purely a combination of self-rising flour and sugar, they have you add the bottle of beer.  You can make this gem at home for under $2.00.  I am sure there are many variations of this bread, but this recipe is just too good to pass over.  Quick, easy, and delicious – how much better can it get?  Try different types of beer, I was just thinking that a chocolate stout would probably be wonderful. I would serve that bread with a side of Nutella.

Ingredients
  1. 3 cups self-rising flour
  2. 3 tablespoons sugar
  3. 1 12 oz. bottle of beer
Instructions
  1. Preheat oven to 350
  2. Grease a 9 x 5 loaf pan
  3. Combine all of the ingredients in a bowl and mix well.
  4. Pour into prepared pan
  5. Bake 50 - 60 minutes, until golden brown

Banana Lemon Bread

The lemon in this bread adds a twist to traditional banana bread.  This bread is extremely moist with just that hint of lemon.  Make sure to test the bread with a cake tester or wooden skewer, when it comes out clean, your bread is ready to remove from the oven.  Enjoy.

Ingredients
  1. 2/3 cup butter, softened
  2. 1 cup sugar
  3. 2 eggs
  4. 3 ripe bananas, mashed
  5. 6 tablespoons fresh lemon juice
  6. 2 cups flour
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1 tablespoon grated lemon zest
  10. Confectioners sugar
Instructions
  1. Preheat oven to 350
  2. Cream butter and sugar together until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Blend in the bananas and lemon juice.
  3. Stir together the flour, baking soda, and salt. Add to the banana mixture. Stir in the lemon zest and mix just until blended.
  4. Pour the batter into a greased 9 1/2 x 5 1/2 in. loaf pan.
  5. Bake for 1 hour or until done.
  6. Remove the baked loaf from the pan after 15 minutes from removing from oven. Cool.
  7. Sift confectioners sugar over the top prior to serving.

Portuguese Pan Rolls

Portuguese Rolls are near and dear to my husband.  Being from Portuguese lineage and also growing up in Hawaii, these rolls are what he remembers from his childhood. This recipe adds not only lemon and lemon zest, but also a jigger of bourbon.  Talk about a wonderful flavor, perfect to serve with dinner or a perfect sandwich roll.  Soft, fluffy and oh so delicious.

Ingredients
  1. 3 1/2 - 4 cups of flour
  2. 3 eggs
  3. 3/4 cup sugar
  4. Jigger of bourbon
  5. Grated rind on 1 lemon
  6. 1/2 cup canola oil
  7. 1/2 teaspoon salt
  8. 1 package dry yeast
  9. 1 tablespoon lemon juice
  10. 1/2 cup warm water
Instructions
  1. Mix warm water, yeast, and 1 teaspoon sugar. Stir until dissolved. Add 1/2 cup flour to yeast mixture, set aside. Beat sugar, eggs, oil, lemon rind, lemon juice, and bourbon. Add to yeast mixture. Add flour (mixture will be sticky). In a warm place raise until double (approx. 1 hour). Dust surface with flour and knead dough for approx. 10 minutes. Shape into rolls, place rolls in well greased baking pan. Cover and let raise until double. Bake 375 for 20 minutes.

Caramel Muffins

Entertaining extends beyond setting a beautiful table and having friends and family over for dinner.  Entertaining includes hosting the unexpected house guest, neighbors stopping by and even taking a sweet treat to a friend who is under the weather.  Whatever the occasion, it is always nice to have a stash of recipes that are easy to prepare, use ingredients from your pantry, and yield terrific results.  This recipe for caramel muffins is just one of those recipes.  You can make these muffins in under 30 minutes from the first mix to the finished product.  Your house will smell great and these muffins are just delicious.  No butter, jam or honey accompaniment needed, these are just perfect just as they are.  One important note, these need to be removed from your muffin pan immediately after removing from the oven.

Ingredients
  1. 1/4 cup butter
  2. 1/3 cup packed brown sugar
  3. 1 1/2 cup self-rising flour
  4. 1/4 cup packed brown sugar
  5. 1 teaspoon ground cinnamon
  6. 1 egg, slightly beaten
  7. 3/4 cup milk
  8. 2 tablespoons canola oil
Instructions
  1. Preheat oven to 425
  2. Grease 12 muffin cups
  3. Combine butter and 1/3 cup brown sugar until mixture is crumbly, divide among muffin cups.
  4. In a mixing bowl, combine flour, 1/4 cup brown sugar, and the cinnamon. In another bowl, combine egg, milk and oil; add to the dry ingredients just until moistened. Spoon batter into muffin cups. Bake 15 minutes. Immediately remove muffins from pan and invert onto serving tray.
Notes
  1. As a substitute for 1-1/2 cups self-rising flour, place 2-1/4 teaspoons baking powder and 3/4 teaspoon salt in a measuring cup. Add all-purpose flour to measure 1 cup. Combine with an additional 1/2 cup all-purpose flour.

Cinnamon Breakfast Muffins

These are the perfect muffins to serve guests on the porch in the morning or in front of a cozy fire with coffee.  These muffins can be prepared and baked in under 30 minutes.  The ingredients you probably already have in your pantry and refrigerator.  These muffins taste like you make a trip to the bakery.  I recommend serving them warm.  I remember taking these muffins to early morning soccer games when our children were little.  Nothing like a large thermos of coffee and warm muffins to share; what a great combo to get the fans in the spirit of the game.

Cinnamon Breakfast Muffins

Ingredients
  1. 1 1/2 cups flour
  2. 3/4 cup sugar
  3. 2 teaspoons baking powder
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon nutmeg
  6. 1/2 cup milk
  7. 1 egg, beaten
  8. 1/3 cup butter, melted
  9. Topping
  10. 1 teaspoon ground cinnamon
  11. 1/2 cup sugar
  12. 1/3 cup butter, melted
Instructions
  1. Preheat oven 400
  2. Combine first five ingredients. Add milk, egg and 1/3 cup melted butter. Mix thoroughly.
  3. Grease and flour 2 mini muffin tins. Fill muffin tins 1/2 full (makes 24 mini muffins).
  4. Bake 400. 12-14 minutes until edges are golden brown.
  5. While muffins are cooking, combine remaining 1/2 cup sugar and cinnamon. Melt remaining 1/3 cup butter. Remove muffins from pans immediately and dip in butter and sugar mixture. Serve warm.

Pizza Dough
Ready in under 1 hour, this recipe will make one thin - medium crust, 14' - 16' pizza

Ingredients
  1. 3 cups flour - if you have "OO" Italian flour, that makes a very authentic crust
  2. 3/4 cup warm water
  3. 1 package active dry yeast
  4. 2 tablespoons honey
  5. 3 tablespoons olive oil
  6. 1 teaspoon salt
Instructions
  1. Dissolve yeast in warm water and let sit for 5 - 8 minutes.
  2. Combine remaining ingredients in a large bowl. Stir in the yeast mixture. Incorporate until you have an ball of dough. If the mixture seems too dry, add water 1 tablespoon at a time. I recommend using your hands to combine. Knead in the bowl until the dough is smooth and elastic. Rub the dough with a small amount of olive oil. Cover and let rest for 45 minutes.
  3. Preheat oven to 425. Punch down the dough and put dough on your greased pizza pan. Pat dough to the size of the pan. Add toppings. Bake pizza 15 - 20 minutes - you will have to watch this time frame - depending on the toppings you might need to adjust baking time. Serve.

Apple Yeast Bread

When I grew up, I don’t think I ever had a loaf of bread purchased at the store.  My mother always made homemade bread.  I remember growing up yearning to have store bought bread just like my friends did.  Little did I know, what an impact my mother has had on my cooking.  It must have been by osmosis that I developed my skills at making bread. There is nothing like the aroma of bread baking in the oven.  The bread recipes I have been adding to this blog are ones that I know a novice cook will succeed in making.  If you haven’t tried baking with yeast, give it a try, I am sure you will be thrilled with the results.  This is not a sweet bread, it is exceptionally moist with the addition of unsweetened applesauce.

  1. 1 package dry yeast
  2. 1/2 cup lukewarm water
  3. 1 teaspoon sugar
  4. 1/4 cup milk
  5. 1 teaspoon salt
  6. 2 tablespoons butter, melted
  7. 2 tablespoons honey
  8. 1 cup unsweetened applesauce
  9. 4 1/2 cups unbleached flour
Instructions
  1. Dissolve yeast and warm water in a large bowl, let stand 5 - 10 minutes.
  2. Add remaining ingredients, combine to make a soft dough. Stir flour in, 1 cup at time. I use my hands to incorporate the last cup and lightly knead the dough in the bowl.
  3. Cover the bowl and let rest for 1 1/2 hours.
  4. Preheat oven to 375 °, grease two loaf pans
  5. After 1 1/2 hours, punch down the dough, divide in 1/2 and shape each 1/2 into a loaf shape. Put in the greased pans, cover and let rise 1 hour.
  6. Bake 30 - 35 minutes until golden brown.

Orange Bottom Muffins

This recipe reminds me of our dear neighbors that just moved to Arizona.   We were watching after their house while they were on a long vacation to Europe.  Knowing that when they returned home they probably would not have anything in their kitchen, I baked these muffins.  I accompanied them with a package of  coffee and had the muffins and coffee waiting for them when they returned home.  Eighteen years later, they still remember these muffins and how delicious they were.  We had a delightful dinner with them last weekend and these muffins were still remembered.  I think that is a ‘yes’ vote for these muffins, I think you will agree.

Orange Bottom Muffins

Ingredients
  1. 1 1/2 cups flour
  2. 1/2 cup sugar
  3. 2 teaspoons baking powder
  4. 1/2 teaspoon salt
  5. 1/4 cup solid vegetable shortening
  6. 1/2 cup milk
  7. 2 eggs, beaten
  8. 1 thinly sliced orange with rind
  9. Honey
Instructions
  1. Preheat oven to 400 °.
  2. Grease muffin pan and set aside.
  3. Thinly slice one orange and place each slice in the bottom of each muffin cup. Top each piece of orange with 1 teaspoon of honey.
  4. Combine the dry ingredients. Blend in the shortening with a spoon until well incorporated. Add milk and eggs and stir until combined.
  5. Top each orange slice with batter, one recipe yields 12 muffins.
  6. Bake 20 minutes, remove from pan, turn upside down.

Packer Fan Cheese Bread (in under one hour)

I am a Packer Fan, as a matter of fact, I am a NFL owner.  One of the best presents I received from my husband a few years ago, was one share of Green Bay Packer stock.  I treat this one share very seriously, like I own the entire team.  So what do I cook during a Packer Game?  Cheese Bread, Sounded like a great combo to me, especially since the Packers won their game on Sunday.

Do you want to mix together a loaf of bread in under 10 minutes?  This bread recipe is for you.  No yeast, no kneading and ready in under 1 hour.  What is better than a warm loaf of bread, hot from the oven and ready to eat. All from ingredients that you probably have in your pantry.  Great to serve with soup, salads, or stews.

Cheese Bread

Ingredients
  1. 2 cups of flour
  2. 3 teaspoons of baking powder
  3. 1/2 teaspoon salt
  4. 3 tablespoons cold butter
  5. 1 1/2 cup grated cheddar cheese
  6. 2/3 cup milk
  7. 2 eggs, lightly beaten
Instructions
  1. Combine dry ingredients. Cut butter into small pieces, add to flour mixture. Use pastry blender or two knives to cut the butter into pea size pieces. Stir in the grated cheese, mix throughly. Add milk and eggs. Stir until combined and all dry ingredients are incorporated. Put into lightly greased 4.5 x 8.5 loaf pan. Bake 375° 35 - 40 minutes until golden brown.
