Apricot Shrimp

Ingredients
- 1/2 cup chopped dried apricots
- 1/3 cup apricot brandy or apple juice
- 1 tablespoon lemon juice
- 1 tablespoon soy sauce
- 2 teaspoons cornstarch
- 1/8 teaspoon freshly ground black pepper
- 2 tablespoons butter
- 1 tablespoon vegetable oil
- 1 green bell pepper, cut lengthwise into 1/4 inch strips
- 1/2 cup sliced green onions
- 4 cups snow peas
- 1 pound shrimp, shelled and deveined
- 1/4 cup toasted slivered almonds
- Hot cooked rice
Instructions
- Combine the apricots and brandy in a small bowl and let stand for 15 minutes.
- Mix the lemon juice, soy sauce, cornstarch, and pepper in a small bowl, set aside.
- Heat the butter and oil in a large skillet or wok over high heat. Add the shrimp and cook just until they loose their transparency. Remove from the skillet. Add the green pepper, green onion, garlic and snow peas and cook, stirring constantly for 3 minutes. Add the apricot mixture and cook for 2 minutes. Return shrimp to the pan and stir for 1 - 2 minutes and stir in the cornstarch mixture and cook until thickened, approx. 2 minutes more. If you prefer more sauce, you can add additional soy sauce to the cornstarch mixture.
- Serve over hot cooked rice, top with toasted almonds.
