Oyster Mushrooms with Sherry Cream

Ingredients

  • 1 pound oyster mushrooms
  • 2 tablespoons unsalted butter
  • 1/2 cup diced onion
  • 2 tablespoons dry sherry
  • 1/2 cup half and half
  • 1 tablespoons fresh basil, minced
  • salt and pepper, to taste

Instructions

  1. Cut mushrooms in 1/4 inch slices. Saute onions in butter in a medium saucepan over medium low heat for approx. 10 minutes.  Add mushrooms, continue to saute for an additional 10 minutes. Stir in sherry, half and half and basil.  Season with salt and pepper, continue cooking over low heat until mixture has thickened slightly.  Serve hot.
